In commercial kitchens, each fridge freezer or cold cabinet should have its own temperature log/record book or folder. This book contains six months' supply of easy to use record sheets with a wipe clean cover, allowing you to enter three readings per day consisting of the temperature, the time and the initials of the person responsible for recording the data.
